Cinnamon Rolls to DIE for!

Oh my heck! I have found THE best Cinnamon Roll Recipe EVER!

I made a double batch today because I froze one batch after I had baked and frosted it and we will take it Monday night for Empty Nesters Family Home Evening!

But, the other batch is for us, for dinner with mom and Ken today and I am taking some to my primary boys this morning, (I am hoping there won't be a fist fight again today~sigh gotta love a room full of 4 yr old boys!).

This is the most delicious batch of cinnamon rolls to ever come out of my oven and I have been baking them for 35 years!  I found a new recipe today and used my favorite cream cheese frosting recipe and tah dah! Perfection! WOW!

Candy Corn Fudge!

I made this last night for the pot luck lunch at work today (and a shepherds pie)

 RECIPE:

3 c Sugar

3/4 cup BUTTER

2/3 c Evaporated Milk

1 jar Marshmallow Creme (or fluff as some call it)

3 tsp Vanilla:   use 1 tsp in the main mixture and set 2 tsp aside for the second mixture listed in the directions below

3/4 c Nestle Semi Sweet choc chips (MUST be semi sweet chips)

1 c White Baking Chips

Orange gel food paste- the kind  you use for coloring frosting for cake decorating- (Wiltons find it at Michael's).  Food color works too, but not as dark or even.

• Line an 8 inch pan with foil and spray with Pam set aside
• Combine sugar butter and evaporated milk in sauce pan
• On medium heat- bring to boil STIR CONSTANTLY it will burn- and cook for 4 minutes
• Take off burner and add vanilla and marshmallow creme
• Put 1 1/2 c into a heat resistent bowl and add the choc chips  stir well and pour in the bottom of your pan lined with foil and put in the freezer
• Divide  off 1/2 of the mixture left into a heat resistant bowl and add the orange gel paste coloring and mix well
• Pour over the chocolate mixture
• Add the white fudge to the top
• Add orange sprinkles lightly over top
• Put back in the freezer or refrigerator
• Let set and cool completely -
• Cut with a COLD knife or it breaks apart and serve! 
• Delicious!

I am going to try this with red white and green for Christmas- and this is awesome tasting fudge too- so will definiately take a batch with me to the Thanksgiving pot luck !

Oven-Roasted Asparagus

I don't know about you, but I am always on the look out for yummy recipes- here is one that I found and thought you would like it too!

I am wondering how it would be to use fresh green beans in place of the asparagus............

Oven-Roasted Asparagus

 

Ingredients
3 pounds fresh asparagus 
2 tablespoons olive oil 
3 garlic cloves, minced

3/4 teaspoon salt 
1/2 teaspoon freshly ground black pepper 
1/2 cup slivered almonds, toasted 

 
Preparation
Snap off and discard tough ends of asparagus; place asparagus on a lightly greased baking sheet. Drizzle evenly with olive oil; sprinkle evenly with garlic, salt, and pepper.
Bake at 350° for 10 minutes or to desired degree of tenderness. Transfer asparagus to a serving dish; sprinkle with almonds.

Baked Zucchini & Herbs a Delicious Summer Dish

Fresh and light, yet savory and satisfying, this dish is versatile and can be served hot or cold. It makes a great healthy side for your summer barbecue or a terrific dinner with mixed greens on the side.

It is also easy to substitute ingredients with this dish. For example, this time I used shallots instead of scallions. And any fresh herb will work in place of the celery and basil leaves.

Zucchini should be SMALL- they have more flavor and are more tender

FRESH from the garden Herbs are best, and can also be found at the Farmer's Market

I use my Bosch Mixer and the shredding attachment to chop the zucchini for this recipe.

Ingredients
5 small Zucchini
4 Scallions, sliced, white and green parts separated
1 small Onion, chopped
2 Plum Tomatoes, coarsely chopped
2 tbsp Celery Leaves (from inner stalks), chopped
4 tbsp Basil Leaves, chopped, plus extra for garnish
1/4 cup Olive Oil
1 tsp. Sea Salt
1/2 tsp. fresh ground Black Pepper

Directions
- Preheat oven to 425 degrees.
- Slice the zucchini in half crosswise. Cut each half again lengthwise, and slice each of the halves into 4 equal, ½ inch pieces. They should look like sticks.
- In a bowl, mix together the zucchini sticks with the white parts of the scallions, onion, tomatoes, celery leaves and basil.
- Mix in the olive oil, salt and pepper and toss to combine.
- Pour into a 3 quart baking dish and bake for 20 minutes.
- Garnish with the sliced green tops of the scallions and the extra chopped basil.

Enjoy!

Total Time: 30 minutes
Makes 4 servings

Summer Menu

CROCK POT COLA HAM 
1/2 cup brown sugar
1 tsp dry mustard
1/4 cup cola
3 to 4 pound pre-cooked ham 

1. Combine brown sugar and mustard. Moisten with cola to make a smooth paste. Reserve remaining cola. 
2. Score the ham with shallow slashes in a diamond pattern. Rub ham with mixture. 
3. Place ham in crock pot and add remaining cola. 
4. Cover and cook on high for 1 hour, then turn to low and cook for 6 to 7 hours.

Crock Pot Pulled Pork Sandwiches 
Ingredients
2 1/2 lb. or larger Pork shoulder or butt
1 medium onion, chopped
1/2 red bell pepper, chopped
1/2 C. balsamic vinegar
1 can chicken or pork stock
1 C. water
Spice mix: your choice of spices or the following:
4 Tbs. of chicken and rib rub
2 Tbs. of garlic salt
2 Tbs. of steak grill seasoning
1 Tbs. of light brown sugar or dark
BBQ sauce:
1 bottle of Kraft honey bbq sauce
1/3 C. packed brown sugar light or dark
4 Tbs. of balsamic vinegar

Directions
Rub spice mix on pork. Place pork in Crock pot and put onions and red bell peppers over the top of the pork and all around the Crock pot. Pour stock, vinegar, and water over the pork. Set Crock pot on high and walk away for 6 to 8 hours. After you have taken your pork out, discard cooking Juices and let meat rest for about 10 minutes or until comfortable to touch. Shred pork with a fork and return to Crock pot. Pour BBQ sauce over the meat, mix together and you are done. 

BarBQ Slow Cooker Chicken
Ingredients
• 2-3 lbs chicken
• 1 cup catsup
• 1 tablespoon brown sugar, packed
• 1/2 cup onion, finely chopped
• 1/2 teaspoon salt
• 1/3 cup water
• 1/4 teaspoon pepper
• 2 to 4 tablespoons butter, optional
• 1/4 cup lemon juice
• 1 tablespoon paprika
• 1 tablespoon Worcestershire sauce
• 1 (8-ounce) can tomato sauce + 2 tablespoons sugar, optional

Instructions
1. Heat all ingredients except lemon juice and Worcestershire sauce. Bring to a boil. 
2. Add lemon juice and Worcestershire sauce and heat until hot. Pour over skinned and cleaned chicken. 
3. Cook in slow cooker for about 6-8 hours on low. 4-6 hours on high.

Molly’s Potato Salad
2lbs of Klondike potatoes, cut into chunks (not little pieces)
½ to ¾ cup of Hellmman’s Mayonnaise
3 hard cooked eggs, chopped
1 stalk of celery, thinly sliced
2 Tablespoons of dill pickle relish

Cook potatoes in boiling water in saucepan for 15 minutes. Place warm potatoes in a large bowl. Add mayonnaise and toss to coat. Add eggs, celery and dill pickle relish. Mix lightly and add more mayonnaise if needed. Refrigerate for several hours or until chilled. We like to make this a day ahead of time. NOTE: use a glass or Tupperware bowl and never use metal utensils in any salad or dish with mayonnaise. 

For the Kiddies---
Chocolate Chunk Marshmallow Sundae
2 packages (3.9oz each) of sugar-free Chocolate Instant Pudding
2 cups of low fat milk
1 (8oz) tub of Cool Whip topping, thawed
1 cup of Jet-Puffed Kraft Marshmallows
4 squares of Bakers Semi-Sweet Chocolate, coarsely chopped
2 cups of fresh strawberries

Beat pudding mixes and milk in bowl with whisk for 2 minutes. Stir in Cool Whip, marshmallows and chocolate. Spoon into a 2qt. freezer safe bowl; cover. Freeze for 4 hours or until firm. Scoop into dessert dishes and garnish with strawberries.

Watermelon Salad
8 cups of loosely packed, torn Boston lettuce
2 cups of seedless watermelon chunks (1 inch)
¾ cup of quartered cucumber slices
1/3 cup thin sliced red onion slices, separated into rings
1/3 cup Kraft Light Raspberry Vinaigrette Dressing
1 Tablespoon of Hellmman’s Mayonnaise with Olive Oil

Combine first 4 ingredients in a large bowl. Whisk dressing gradually into mayonnaise until well blended. Add to salad; toss to coat. Serve chilled.
