If I had $1.00 for each time I have been asked that question about my home canned bacon, well, I could make several trips out west to see my grandkids!
I took the pint jar of home canned bacon bits and pieces and put it and some shredded onion in a cast iron skillet. As it was browing (it's already cooked in the pressure canning process) I drained off the grease and put the bits and onion back in to crisp
After they were crispy to my taste, I added them to my crock pot-
1/2 lb. ground beef
1/2 lb. bacon
1 onion, chopped
1 tsp. salt or less
3/4 c. brown sugar
1 tsp. dry mustard
2 tsp. vinegar
1/2 c. catsup
#2 can pork & beans
#1 can kidney beans
1 (15 oz.) can green beans
1 c. chili sauce (salsa)
Brown ground beef. Brown bacon and crumble. Saute chopped onion. Combine all ingredients. Mix thoroughly. Put into crock pot. Heat slowly.
Good for pot luck. Can be increased. Heat slowly and stir occasionally to keep from sticking if not in crock pot.
And this my dear friends is what was for dinner last night- and probably lunch today! This is a fun, easy and TASTY recipe (I don't add the chili sauce) They are nummy and you could eat with bread and butter like I did or put them over cooked rice.
I guess after a lifetime of doing canning and food preservation, I am always surprised when I am asked "what do you do with"
My reply? Well, when you buy (that item) at the store, What do YOU do with it?
Snow here but not enough- will probably melt over the weekend. But I am glad it's here as I am not a weather whiner-
