This has been a standing Christmas candy in my home for 25 years. A lady named Betty used to make these and would make mine if I bought enough ingredients for her a batch and me a batch. Before she passed away she shared her recipe and I began making my own.
Here is the recipe I created in My Digital Studio for a cookbook as a gift and then I missed the printing deadline so now I have to get it printed late and gifted late- sigh
Here are the candies rolled and dipped in chocolate
I have a Wilton chocolate melting pot- electric I used semi sweet chips and some Crisco (to harden it)
Dipped and still wet- they got the taste of approval from my mom the coconut candy coniseur ;o)
(2lbs of powdered sugar is 8 cups) the recipe page is now adjusted but I had this saved first- ;o)
They are also great with pecans instead of walnuts- but almonds just don't work very good for taste.
